Hi, I'm Jennifer Cail. On behalf of Expert Village I'm going to show you how to make this delicious spicy sweet potato pie. Now that our brown sugar is incorporated into our mashed potatoes our next step is going to be adding the cream. We are going to add one cup of heavy cream and then we are going to slowly whisk it in, add all of that cream. This will really help set the pie, so once again with the sugar it's going to take a little bit of whisking before it starts wanting to be incorporated, you have your nice little lump inside your whisk. Of course the larger the whisk the larger the lump and you want to be careful when you start mixing it so that you don't splash. Now that it's starting to get more incorporated we can speed our mixing a little bit and you can see that the streaks of white from the cream are lessing and you are getting a more uniform orangy color. Of course this almost looks like a pumpkin pie but it's not. Now you are starting to see where it's lumpy the potatoes are coming through again so we can speed up our whisking until we get every thing incorporated and there is no more streaks of cream, we are ready for the next step.
