How to Chop Lemon Grass

To use lemon grass you typically want the flavor of lemon grass in your product, without eating the lemon grass. Lemon grass can be very firm and very bitter. So take your lemon grass and with the back of your knife, the blunt end, we're just going to make two indentions. What we're trying to do is break up the fibers, just a little bit. Once you have the insides exposed, you can now use lemon grass. It's a really great way to flavor stocks and curries this way. And that is how you prepare lemon grass.
