So here's how I made the rice for the Pineapple Fried Rice. I took an organic long-grain brown rice, and I basically followed the directions on the package. Which said, to take two cups of water, which I did, in a saucepan. You can salt it if you want; I didn't, I never really add extra salt to anything. After the two cups boil, I added a cup of this rice. I stirred it in, covered it, reduced the heat to simmer, and simmered it for forty-five minutes. The basic rule of thumb is, if you want your rice firmer, you use less water; if you want it more fluffy or liquidly, you use more water. If you want it firmer, the cooking time is going to be longer, for more liquidly, it's shorter. If you have a rice cooker, that's a great way to do it. But you know, you can even buy--I've seen at Trader Joe's, rice already made or even frozen, so you don't even have to cook your own rice if you don't want. But even better, when you order take-out and you have leftover rice, this is a great recipe to use for the leftover rice.
