Start Cooking Pineapple Fried Rice

I don't have a wok, you don't need a wok to make delicious, healthy Asian-inspired food. I have a non-stick skillet, though. I'm going to turn the heat on medium-high, and again, if you wanted to spray it, if you didn't want to make any oil in this recipe, you can. I don't mind using a little oil in my cooking. I'm using a high-quality extra virgin organic olive oil. Basically, I just coat the bottom of the pan, and while the burner is heating up. And you would probably do the same thing with the wok, you just want the oil evenly distributed on all sides. And I would be very surprised if that's even a tablespoon of oil. I didn't measure, but it's really not very much--you just want to coat the pan. I'm going to put that down. The first thing I'm going to do is saute my red bell pepper and my scallions together. You've got to remember I said non-stick pan, non-stick utensils. I'm going to saute that for about two to three minutes, again. I have an electric oven here; much prefer cooking on gas, because you can see and control the flame, but on an electric it's about medium-high, or if you have numbers on yours, this is about between number six and seven. You can start to smell, and see, that it's getting to the point where you want it. Again, we don't want things overly cooked, it's just we want them hot, we still want them to be crispy, we want the green to remain green. You can probably hear the sizzling now, which is what I want. The next thing I'm going to add are eight ounces of green peas. These are frozen peas, these are organic, eight ounces is half a bag, and I'm going to pour that in. Cook it for maybe another minute.
