How to Serve Kung Pao Tofu

So, really, just in a couple of minutes, you can see how thick this sauce has gotten, which is how Chinese sauces, or Asian sauces, generally are. I'm going to put my tofu back on the burner, and then I'm going to pour the sauce over it. I like guests to be able to have a lot of sauce, so I always have some sauce on the side because there's nothing worse than when you get to the rice and there's just no sauce left. So, I'm just going to stir it around in the pot, completely coat the tofu. And that also can keep it nice and warm because you have moved the tofu away from the burner, or, unless you have another burner, maybe it stayed warm. What I like to do is, I like to serve it family style. And I like to get a nice pretty serving tray, and take my broccoli and make a ring. And then take my tofu mix, and pour it in the middle. And it's sort of like they do it at P.F. Chang's. And, again, I make sure I provide plenty of extra sauce on the side for when you get to the rice. It's just the rice and sauce are delicious. If you like, you can sprinkle a few sesame seeds over the top just for show. And a few chopped scallions always make it pretty. And there we have it. Quick and easy, healthy and delicious, Chef A.J.'s version of Kung Mao Pao Tofu.
