About White Tea Leaves

Ok. Again, all three thousand different kinds of teas that we drink are derived from the tea plant. And, I'm going to be talking about the basic most general categories of those teas starting with white tea. Now, you'll recall I said that teas get their different characteristics from how they're grown, how they're harvested, how they're processed and how they're proofed. So, the white tea. I have an example of it here on the end. White tea is, you harvest the unopened buds of the plant and two or three of the newest leaves that surround the bud. This tea has the lowest caffeine content of any of the teas. Basically, after it's plucked almost immediately the leaves are steamed and dried. And, basically what the steaming and drying does is it stops the decomposition process. And, that's what keeps it white. You can kind of see it's got this little white fuzz that comes out on the new leaves. And, that's kind of where it gets it's name.
