How to Serve Cucumber Salad

And I'm just going to stir it around. Now ideally, you'd want to have the flavors meld for about 30 minutes before serving. So, you'd make it a little bit in advance because it can marinate a little more deeply and when I serve it I like to put chopped peanuts on it. But what I like to do, I never put the peanuts on until right before I'm ready to serve it because it can get really wet and really mushy and nobody likes a mushy nut. I like to use the unsalted but the roasted peanuts and again if you're a raw foodies? I know you can find raw peanuts these days, I've seen them at Aerowan. But a really easy to chop peanuts is; I love gadgets, anything that will make my life easier, but these little food chopper, they're available everywhere, just a couple of hits and you've got chopped nuts. Another thing you can do is put them in a plastic Zip-Loc bag and hit them with a rolling pin, just really easy. Sometimes if you try to chop nuts in a food processor it turns into nut butter, so I wouldn't do that. I've got a cup of chopped, roasted, but unsalted peanuts. Again there's already salt in here. You don't need to have salted nuts. Pour it on top. Mix it up. Then I'm going to put it in a bowl. You can always put a few more peanuts on top for a garnish. Actually there's plenty of peanuts in here but if you like stick in a piece of fresh mint and serve.
