So, you can possibly hear this little sizzling. I have it over medium to medium-high heat. I'm just going to pour the one pound of cut carrots. I know you can get carrots already shredded. I wouldn't use shredded carrots. I don't think it would work so well in this soup. It might look pretty as a garnish but I don't think it would work well. I always like to sneak in as many vegetables as I can in every recipe I can. So, originally this recipe had only a cup of carrots in it and I'm like you know what, the more veggies the better so I actually quadrupled it. Especially because one of my missions is actually trying to get kids to eat healthier and with the rate of childhood obesity and childhood diabetes now, that's my mission in life is to teach people, especially kids, that eating healthy can be easy, delicious, and fun. So, I'm going to sauté this over medium to medium-high heat for about seven to ten minutes. Really, I'm just wanting the carrots to be soft and tender to the bite, not mush.
