Preparing an Onion for a Tagine

Hi. My name is Sheena McLeod from Kitchen Connoisseur. And today on behalf of Expert Village, were going to prepare a traditional Moroccan dish known as beef and acorn squash tagine. So now were going to prepare the onion. Notice that I have cut the top off and left the root in tact and I have taken the peel off the onion. Then most people want to cut down the middle this way. And that would be fine if you want to do rings or circles. In this case, we want to chop our onion. So what you want to do is cut from end to end and come up with two distinct ends like this. And because were chopping this onion I am going to cut large diagonals, about one inch apart. If you were dicing it, you would make them about a quarter inch apart. Then we just have to cut the end this way. Waa lah! We have chopped onion. Then this onion goes into a bowl. And were going to add the same spices, the flor de sal, Moroccan spices, freshly ground pepper, and roasted garlic oil. Then were going to toss all these things together so that the flavor is consistent. Then the onion is ready to go into the acorn squash in our tagine.
