Using Lecso Base for Hungarian Goulash Soup

As a good Hungarian custom we will start to cook the szurkamarha goulash on the basis of lecso. We will prepare a meal for four people so the quantities of ingredients will also be for four people. First of all I will put a half of kilo of onion that I have cut into pieces into hot melted mangalica pig fat. When the onion is golden yellow we put tomato that wass cut into cubes into the kettle on top of the onion. We also put paprika that was cut into cubes. We leave these materials to boil together. Never pour water on it. We leave it to cook for a while until the tomato lets out its juice and then this liquid evaporates. The basis of our goulash will be ready. The ready lecso is used as a basis not only for the goulash soup but also for the Hungarians stews. This is one of the main basic ingredients that is used also the lecso that you see here can be eaten as a separate meal; in addition if we are preparing it with olive oil, then we could eat it as a vegetarian dish.
