Removing The Cajun Deep Fried Turkey from the Oil

Hi! This is David for expertvillage.com. We are just finishing up our turkey. It’s been in the oil exactly 42 minutes. We do about 3 minutes a pound. You can go a little bit more it you like but it is pretty precise. What you want to do is get a platter ready. Get some paper towels for the excess oil and then you can go get your bird out. Use pot holders; these will be pretty warm. So you want to just pull out the bird here and make sure you drain it properly and then bring it over to your tray. At this point you can pull out the coat hangers. I always do my birds outside on a hard surface. Inside doesn’t work very well only because the bird going into the oil is cold. It will actually make the temperature of the oil go down and it is very hard to get that oil back up to temperature quickly on a stove. It may actually overflow so I would always recommend doing it outdoors on a hard surface.
