Now that we learned how to get the pasta through the machine, it's time to learn what to do with it. In other words, cutting it off the machine. So once you have your pasta extruded to the length that you want, it's time to cut it. You are going to want to have a very sharp knife. Now as I said earlier depending on how stiff or how sticky your pasta is, you might get a different variations of how to distinct it is with the dyes. So for this one, we're going to cut it fairly short so that it maintains more of it's shape this pasta is a little bit sticky and you're going to cut as close to the dye as you can. It might be a little bit stringy when you cut it off but you want to get it all the way there so you can see I'm cutting all the way against were the dye is. You want to make sure that you get all of that. Otherwise you are going to have very uneven edges and you can also cause clogging depending on how long you're waiting in between. You want to get that nice and flat on the edge there and then you are ready for the next one to come out. Whatever size you decide to have your pasta, you want to make sure when you're going to cook it that you try and have uniform sizes. Because that is going to make cooking that much easier and it will be easier to tell when it's all done.
