Standard Whipping Techniques With a Stand Mixer

For the second highest speed which is an eight, this is going to be used for whipping. So you're going to have your wire whisk and going to demonstrate with some egg whites, so I'll put those in there. You don't need to go up to the very highest speed when you're whisking egg whites or beating cream. The mixer is powerful enough to be able to handle both of these easily without going all the way up to speed. We're going to put it on eight and I'll take it out so you can hear me talk. You can see how it's already lots of air bubbles that are being incorporated into the egg whites. One thing you want to be particularly careful about is when you're whipping-whipping cream and you are using the whisk if you have it up too high for too long that whip cream can quickly turn to butter. So you want to make sure that whatever you're whipping you keep an eye on it to make sure that it doesn't get over whipped with this powerful mixer.
