Slow Mixing With a Stand Mixer

Slow mixing is going to be similar to stir. Slow mixing is the number two on the speed for your mixer and it's going to be for some similar things such as kneading dough but it's going to be a little bit faster so instead of using for just incorporating the ingredients. It's going to be more mixing you are going to use it for of course kneading your dough once the ingredients have been incorporated. Also use it for some other batters. Perhaps your mash potatoes if you have something else added to them like mash parsnips or something a little bit thicker and you need some more speed. It's also good for incorporating shortening or butter into flour, if you're going to be making a pie crust or some type of crumbly topping or dough topping. Then you're going to want to use a slow mixing speed. You don't want it to incorporate everything. You want it to have a more crumbly texture, so this is the speed that you want to have. Of course if you're going to be making a pie crust and incorporating that shortening or butter into your flour, you are going to use your flat paddle once again. So instead of having it on the lowest speed for just incorporating, you are going to have it on speed two.
