Now it's time to move on to our dessert. We're going to be making Le Potsipot de Creme, which is little pots of cream. And I'm going to be serving them, because their very rich, just in these very small quantities. That's the thing about French desserts, they're quite small because they're so rich. They're enjoyed every day and if you had a huge dessert every day, well, the French wouldn't have the reputation that they have, right? So I'm going to measure out 1 3/4 cups of heavy cream. Look how gorgeous that is. And I've got this heating, here I'm going to pour the cream in. It's just on low. You want to make sure that your cream is heating through to the point right before you can see it's going to start to boil. And again so, small small quantities. This dessert was actually inspired by a hot chocolate that I had at a very famous French Chocolatique called Le Masion de Chocolate. And it's literally...they don't even take the time to cool it into a pudding the way that we're going to do. I was literally drinking a cup of cream and chocolate and it was just amazing so I knew I had to come home and do something with that. You can see it's just starting to bubble around the edges so you know it's about to boil. So let's go add some chocolate to this.
