So to assemble the dry ingredients for these buckwheat pancakes, I'm going to begin with 3/4 of a cup of buckwheat flour, plus 1 tablespoon. Don't ask me why, that's just the recipe that I got right when I came back from France, when I was craving these kipe that I couldn't find anywhere here. And a 1/3 of a cup of all purpose flour (this is the recipe I found then, and I've stuck to it ever since), and then a 1/2 a teaspoon of salt. Some recipes actually will also call for the addition of wheat bran, which will up the fiber. This is on its own quite high fiber. And then just mix to combine. Our brown butter looks sufficiently cool, so let's do the wet ingredients.
