Okay, I switched to a serrated knife as you can probably see. I was gonna do that earlier, but I just grabbed a knife. I didn't realize it wasn't serrated. A serrated would be better; like a steak knife, or a bread knife. That would be better. Then my last kiwi, I've been cutting it up in somewhat large chunks for a couple of reasons. One, I just love kiwi and I just want a big part of it. But also, because we'll put it on the stove in a minute with a little bit of sugar to make a nice syrup to go over the cheesecake. The kiwi is gonna shrink down a little bit. Ooh, about time to check on the cheesecake. We'll check on it in a minute. I set the timer for thirty-nine minutes, and it really likes to let me know. So I'm gonna check on that when I get done with the kiwi. So I cut it in large chunks. They'll shrink down a little bit from the heat. And also, kiwi is delicate, especially the inner part where the seeds are. It's pretty delicate fruit, so you want it in larger chunks where you can stir it easily and kind of mix it around without making it one big mushy mess. So, kind of large chunks like that that I'll put into this pan, oh, that one's kind of big, just want to make it a bit smaller. And I'm just gonna put a little bit of sugar over this after I wipe my hand off. And we're gonna put it on. Let's see, I have about six kiwi here. I'm gonna put a cup of sugar on this, maybe a little bit less and stick it on the stove. A nice syrup is gonna come because the sugar really pulls out the juices of the kiwi.
