Ingredients Needed for Making Cheesecake Filling

Okay our crust is in the oven. We have just about five more minutes left on that. We'll start on our yummy cheesecake filling. First we have, of course the cheese part is the cream cheese. We need sixteen ounces which is two regular packages at room temperature. Now it's gonna take a couple hours. For some reason mine took a while to get to the room temperature today. Just set it out, if you want to run some errands or something, just set it out or when you first get up in the morning, set it on the counter. You also need a cup of sour cream, also room temperature, five eggs, also room temperature, some heavy cream, not room temperature. Some sugar, some vanilla and that's it, that's pretty much it. You actually have butter in this part. We like to bake with room temperature ingredients. Baking has a lot to do with chemistry and how everything comes together and the reaction that the sugars have with these chemicals and how everything reacts together is really, really crucial in baking. So, when you have room temperature, everything goes together so much better. You're not dealing with clumpy cream cheese, or the eggs don't, they're not so cold where they make something else clump up, everything will gel together very nicely. So first we're gonna start with our cream cheese getting that to a nice, smooth creamy consistency in our mixer.
