How to Make Corn Salad for a Picnic

Now time to get started on the corn salad. So I got some water which is rapidly boiling away back here. Lift that off. I am going to place the corn in. Okay, and those will just boil away for the next 5 minutes on high. Let's start on the dressing while we wait. What I am going to do, is I am going to take stir this up a little bit. This is some apple cider vinegar and you want to stir it before you, shake it rather before you use it, because the deposits stay at the bottom if you don't otherwise. We are going to take 3 tablespoons of apple cider vinegar. And dressings are usually either 50/50 acid to oil or sometimes 1/3 acid to two parts oil. This is actually a very easy recipe to remember because its just equal parts. So 3 tablespoons of extra virgin alive oil. I am going to whisk that together. I am going to put a little bit of salt. Going wait though till all the ingredients are combined till I know how salty I want it. Then I got some red onion that I have chopped. You can use scallions as well. I am just going to put them right in as I whisked it because they will absorb the taste of the vinaigrette and sort of marinated in it as well. We'll give those, what do you think, another 3 minutes? Then it will be time to get them right off the cob and finish off the salad.
