Overview of Feta Cheese

VICTORIA GUTAVAS: While the fish is baking, I want to do a little introduction to feta cheese. Now, what we're going to be doing at the end is plating the food with a piece of feta cheese. And what's great about what's happening today is that, as you can see in this wonderful little plastic container, there's actually feta cheese in here. I'm going to dig some out with my fingers here. It comes in a wonderful, little square of feta cheese and it comes in brine. And brine is salted water. And the great thing about feta cheese that it's being produced and stored in brine is that it's going to stay moist and it's going to stay fresh for a very long time. Even once you opened this container, which in the past we didn't have that option, feta would come in a plastic wrapper, it would come crumpled up, and in a couple of days, it would actually be dried out. And so the beauty of this is that, now, we can take the actual portion of feta cheese straight out of the brine. And you know at a Greek table in the village, what they do is they actually cut it up into portions just like I'm doing now and you can see, how beautifully moist this feta cheese is. And for those of you that have never had feta cheese before, it does have its own distinct flavor. This particular feta cheese, I believe is made from goat's milk, and goats, of course, are a staple animal that run around the mountains and the hills in Greece. And goat's milk is used for a variety of different things especially this feta cheese. It has a richer and creamier flavor than feta cheese that's made with goat's milk--I mean, with cow's milk. So what you want to do, if you have the choice, is buy feta cheese either made with goat's milk or sheep's milk. And this feta cheese is ready for our plate up.
