VICTORIA GUTAVAS: Now that we have it all assembled, we're ready to bake the fish. So once again remember that it's 375 for 50 minutes. One of the things that will help cook the potatoes faster, because the potatoes are the densest parts of this whole dish, is to take a piece of foil, place it over the top of your whole entire dish and what you're going to create is steam. The steam will not escape from the foil. So what I'm doing is placing foil all the way around the edges of my pan, and what I'm going to then do is put it on the middle shelf, in the middle of the oven for 50 minutes. Halfway through though, this is grandma's tip, halfway through baking it, what you're going to do is remove your foil to give it that beautiful, roasted flavor and roasted color on the top of your dish. So let's go ahead and get this dish in the oven. All right, 375 for 50 minutes and then you're going to have a feast that's fit for the gods and goddesses.
