Combining Wet & Dry Ingredients for Greek Fish Plaki

VICTORIA GUTAVAS: Now that the tomato paste is diluted into this wonderful, thick, rich sauce, we're going to put together all of our ingredients, the dry ingredients, which will be the potatoes and the onions, with the wet ingredients. So as you remember, we've got the potatoes all cut up nicely in this bowl. We're going to add the onions to them. Into the onions and the potatoes, we're going to put, at least, a tablespoon and a half of salt. And salt those up really nicely because as they cook together--just put a little bit more for flavor. And then we're going to add our pepper. The majority of the pepper is good here. It's a little bit more than a teaspoon and just go ahead and salt up those. Put the rest of it in there, that'll be great. Now what I have here, the parsley flakes. There are actually two tablespoons of parsley flakes, and those are just going to be put into the onions and the potatoes as well. As you can see, this is a really--once you get the ingredients down and all put together, it's a really easy dish to assemble. Our wonderful, beautiful raisins are going to go in here, and then we're going to slowly pour in our wonderful tomato sauce which is going to be the base for our mixture here. Now the secret ingredient. Again like I mentioned that in Greece, olives, olive oil, tomatoes, raisins, grapes, wonderful wine, I mean all of these staples are just everywhere in Greece. And they're really organic, and that's why a lot of people love Greek food because it's really tasty. And what I'm pouring in here, just so you know, is a third of a cup--I'm sorry, three-fourths of a cup of olive oil. Once that goes in, we'll pour the olive oil in and then we're ready for assembly.
