Hi! This is Dave from expertvillage.com. We’re making our jambalaya today. We’ve just brought this back up to simmer after adding the stock and all the other ingredients necessary. So, now we are going to add the tomatoes. Now, you can do… Creole tomatoes are great if you want to do fresh. I use cans sometimes, including the juice, because it has a lot of flavor in it as well. So, I use this very large can of course, and this is for 100 people thereabouts. And you want to add this, including the juice, to the mix. And these are called salsa diced tomatoes, so a little bit smaller dice that you usually get used to, but you can find these in any grocery store, if not you can use a regular type of diced tomatoes, a little bit larger dice, and then we are going to add tomato puree. You can use tomato sauce if you like, that would work just as well. This is a little bit, and it has more flavor to it, and this is what we are looking for, layers of flavor. So, we just add this to it, that will also add some thickness, and we’ll stir that all together. If you are adding fresh tomatoes, this will take longer. So, you will want to figure that in with the recipe. These tomatoes are ready to go, already cooked of course, and also these are ready to go, but if you want to use your own, that’s fine too; just add say 15-20 minutes of cooking time and just mix this all in. You see the extra color, now that’s added. So, this is also a part of Creole cooking, using tomatoes as a real type of standard technique, time on it. So get that mixed together, and you just want to bring that up to a simmer again. Let that simmer for about 15-20 minutes, a little bit extra if you do have those fresh tomatoes, and then it will be ready for the next step.
