Adding Vegetables to Jambalaya

Hi! This is Dave for expertvillage.com. We’re starting to build our jambalaya now, we have got a first foundation of flavor, there is sausage and a ham, we are ready to put in our diced vegetables, now this is going to be the bell pepper, onion and celery that we cut up about the same dice, this is our second layer of flavoring. You just stir that in, and scrape out any bits on the bottom from the meat; that will start this flavor process. There you see a lot of the good bits on the bottom, so make sure you get all of those in, and again this is why it is important to get those veggies about the same size to cook together just right, and you will also notice that they are also about the same size as the meat. So, this will be great; every bite will have a little of everything in it. So, what we want to do is cook this together until the veggies are about translucent, I would imagine about 10-15 minutes for the size of pot, and then we will see what comes next.
