Adding Sausage & Ham to Jambalaya

Hi! This is Dave from expertvillage.com. We’re about ready for the part that everybody has been waiting for, all of our prep is done. Now we have our big pot going, we have got the flame underneath it. We’re going to add a little bit of vegetable oil. Now this is optional, I like it so, it gets the sausage started, of course there is plenty of oil in the sausage once it gets going, but this is a nice start for it so. I usually use canola oil, you can use any vegetable oil will be fine. I find corn oil has probably too much of flavor for this type of thing, so, let us just go ahead and put in our meat, as you remember we have a tassel ham and andouille sausage, all chopped. They are about the same size, and you hear its sizzle as we pour it in, and this is our first layer of flavor. This is going to be the foundation for the entire jambalaya here, so we want to get this going well…
