How to Melt the Butter to Make Crepe Batter

Hi! My name is Bill Kosmas. On behalf of expertvillage.com, I'm trying to show you how to melt the butter for one of the main ingredients that goes into the batter for a crepe. The butter has to be melted extremely in a low condition so it will not burn. You do not want to burn your butter. If you burn the butter, it starts getting a funny oily taste to it, and that makes a difference on how the flavor comes out on the batter. We keep a real close eye to it, so that way it will not burn at all. When all the butter is melted to the pan and when you don't see this piece here and it's all liquid, then you turn off your dial here. You set it aside. Give it about 15 minutes so the butter can cool down. When we put it inside the butter. That way it will put it nice and slow so that it will not cook the eggs that we already put in there with the flour.
