ALLAN DIWAN: Hi, my name is Allan Diwan. I'm the chef and owner of Kashmir Restaurant, a Kashmir-Indian restaurant in Budapest. We are here on behalf of Expert Village. We're going to prepare a red snapper in a tandoori sauce. Then what we're going to do is take the spices and lay it on the chopping board, and then we're going to use a rolling pin to crush the two spices very coarsely. We don't want a very fine powder but we want a nice, coarse powder of the cumin and the coriander seeds. And we're going to add the cumin and the coriander powder that we've cooked--roughly powdered on the chopping board and put it, about two handfuls, to the marinade and we're going to mix the marinade with all the spices, the lemon juice and the tomato paste.
