ALLEN DIWAN: Hi, my name is Allen Diwan, and I'm the chef and owner of Kashmir Indian Restaurant in Budapest, we're here on behalf of Expert Village. And the next dish we're going to make is pilau rice. We're going to make pilau rice with green peas. So, what we need to over the lid is a cotton cloth, which has been dipped in water. We squeeze out the water, and keep it aside. And we're going to use this damp cloth to cover the lid to steam the rice. Keep your butter ready, and let's see how our rice is doing. So, it's almost ready. We'll going to give it one more minute. And as you can almost see now that the bubbles are there, and you can see that the holes are already there on the top of the rice. Most of the water has been evaporated. Let's take the heat down to a very minimal. We've taken the heat down. I'm just going to shake it once and you shake this once to mix up the rice and the spices and everything, but we do not want to over shake it because, as I said, the rice is very delicate, and we do not want to break the rice. Now, I'm going to put some knobs of butter on top of the rice. Again, if you are looking for a healthier version, you can go without the butter, but the butter does impart a very nice fragrance to the rice. That's about it.
