ALLEN DIWAN: Hi, my name is Allen Diwan, and I'm the chef and owner of Kashmir Indian Restaurant in Budapest and we are here on behalf of Expert Village. And the next dish we're going to make is our pilau rice. We're going to make pilau rice with green peas. We're going to wait now for the water to evaporate and when most of the water has evaporated, then we'll go on to the next phase. And one way to recognize how the water--if the water has--most of the water has evaporated and if we are ready to go to the next phase is when you see on the surface of the rice, some small holes, and you see the bubbles coming out from the rice. And these small holes indicate that the steam has escaped from the water through these holes. And when you see those holes, then you are ready to go to the next phase. As soon as you see these holes, then you have to stir once the rice, add a little bit of butter to the rice, and cover it. Cover the lid in a damp cloth. Put the lid back on top of the rice, and then steam it on a very low heat for about fifteen minutes.
