So look at that. The leeks are very, very soft. Just getting golden in some places, but that's how, you know, it's done, really, really soft, and it smells sweet more than anything. So I'm going to transfer these, and of course they're beautiful and glossy from the butter. Transfer these to a small bowl for just a second, because I'm gonna get cracking, literally, with the omelet. Now for an omelet, a generous size omelet, you want to have two eggs per person.
