So the first step to do our caramelized leeks is getting the leeks ready, of course. So, leeks are actually, if you haven't worked with them before, they're from the family of onions and garlic. But can you see why you have to wash them. Because they grow right in the dirt right with all the onions. So what you have to do is, you see the edges that we trimmed off, slice it down the middle and really quite, this one doesn't have too much dirt, but you still want to sort of fan out the leek like that to get the dirt, because sometimes they're really, really full of dirt. Get some paper towel so that those can drain. Pat those dry. And then the second one, let's see, this one looks like it's really full of dirt. See on that end we can see why it's important to wash it clean. Leeks are used in a lot of French cooking. I actually went to a French market once and the size of the leeks, they were about this big, so what we want to do is to caramelize them Just cut them as though you would cut any other onion. It's just much more a mild onion than regular white onions, or even red onions. Can you see, I'm not even crying. Once I finish cutting this one up, I'm gonna take it to the stove where I've got some butter melting and we'll start the caramelization process.
