How to Peel & Chop Onions for Chicken in a Pot

My name is Brandon Sarkis on behalf of Expert Village.  Today I'm going to show you how to make the traditional French classic dish poule au pot, or chicken in a pot.  Okay, so now it's onion time.  So what we're going to do is we're only going to use half of this onion.  So, I'm going to lop the top off here.  Set that in my trash bucket, and I'm just going to  cut it in half just like that.  I'm going to set half of it aside and I'm going to keep half.  After I peel the half that I'm going to keep.  This is a pretty banged up looking onion.  You know what, I'm not keep that half.  That's the more banged up looking half of the two.  That's what happens when you buy onions by the gigantic sack is sometimes you end up with the ones at the very very bottom of the bag that lived a hard life until they came to live with you.  Oh well, so let's just peel this, which I'm having trouble doing.  Okay, so we've got our onion all peeled.  So what I'm going to do is since this isn't a huge part of the dish, we're not going to eat it, I'm actually going to leave this in strips.  So what you do is just simple, you just slice just like this, keep it....
