KEILLY MORRIS: Excellent. So today, we're going back to our classic shrimp ceviche. So ingredients, super simple. First, we have a little bit of cubed butter. We have some chopped garlic, some chopped shallots and Vidalia onions that we're going to lightly sweat and soak them out. So what we want to do, we want to bring the flavor out without overcooking them. And I'm just going to go with just four cubes, quarter-inch thick. Keep that nice and going. The smell of butter just always captivates anyone. Next, a little bit of our chopped garlic, or as my friend, Emeril Lagasse, will say, "chopped garlic." Give that a light stir. So right now, we're just sweating this out. We want to bring out the natural flavor but without the bite of the onion and the garlic. Now while these are going, we're going to add just a little bit of seasoning to them. This is our little special seasoning right here. Set that to the side. That's to the point where we want to keep it. They're not overcooked. The aroma is starting to extract. That's beautiful right there, onions and garlic anytime. Last but not least, two tablespoons, any table white wine works really good, gives it a little bit more flavor, and what we're going to do right now is reduce this down.
