Adding Thyme for Focaccia Bread Wedges
Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make quick fix focaccia wedges. I have a nice bunch of fresh thyme. I'm going to add about two teaspoons of fresh thyme. Or if you just have dried thyme, use about a half a teaspoon. All I'm doing is trying to keep the stems out. I'm just grabbing the leaves by pulling back, like so. You see how I let this cook to where it reduced to about half? What I'm going to do now is just add some fresh pepper. Going across. And some fresh, some fresh, and some salt. About a punch of salt, a little handful. All around. Mix that in. And what we're going to start to do now, is we're going to just, with our spatula, start to mash these beans a little bit. See how I'm mashing them? So it's almost like a paste. See right here how I found one with a seed in it? With a stem in it. Just pull it off so you get the stem out and put the leaves in. So if you see any stems that got in from the thyme, don't worry about it, just pull them out. And just give this a good mash and fold over and mash. Fold over and mash, fold over and mash and what we're going to do is take this off our flame now after you get it mashed up. Alright so this bean mixture is ready. We got it nice and mashed up. We're going to take our bread out, our focaccia bread and start spreading this on our bread.
