How to Sauté Onions for Focaccia Bread Wedges
Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make quick fix focaccia wedges. Alright, we're going to get some oil and butter. About two tablespoons of butter, one tablespoon of hot oil in our pan and get it real hot. Alright, we're going to use about two tablespoons of butter. Put that in our pan and one tablespoon of olive oil. You want enough to just coat the bottom and get that really hot before we add our onions. Alright we're going to add all these beautiful onions. Start to get them cooked down and caramelized. Alright you're going to start your onions and you're going to, it's going to take about ten minutes to caramelize down. About eight minutes into this though, we're going to add the rest of our garlic and our peppers to this. We're cooking on a medium flame. Our onions are cooking down real nice. They're starting to really open up and loosen up. They're going to start caramelizing. You could actually add a little bit of sugar to help with the caramelization here. But after about eight minutes, what we're going to do then, is just add our garlic to this and start to saute that. And we're also going to add all our garlic nice. And we're also going to add our red pepper to this. These are some nice colors for our focaccia bread and for our pizza dough. Just start cooking this up. Alright, you're going to keep cooking this until you get some nice brown caramelzation going on. Your peppers going to be cooked down, your garlic going to be cooked nice and it's going to smell just great and then we're going to put it aside. Come back.
