Chopping Onions for Focaccia Bread Wedges

Hi, this is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make quick fix focaccia wedges. Alright, we're going to take our onion, we're going to get our skin off of it and we're going to cut it into nice rings. Alright we're going to cut off our ends. And we're going to score the onion and just cut off that, take off that shell. I usually go back one layer. That makes it nice and easy to work with. Alright we're just going to carefully put our finger and slice nice thin slices of onions. That's all we're looking for. Nice thin slice. Straight through the onion. All the way back. So you're cutting your onion the same way. Nice thin slices. Alright what you're going to do is just cut all your onions up and the reason we slice them like this, they look real nice when they caramelize. They get real long and skinny and it looks good on the focaccia bread. So with that said, cut up your onions. We're going to start cutting up our garlic, and get over to our frying pan. We'll start sauteing these bad boys up and getting them caramelized.
