Hi, this is Josiah Owen and today we are going to talk about making pot roast. Now that you have your meat basted with the flour, salt and pepper we are going to go ahead and take our knife. We are going to cut slits in here we don't want to go in too deep. Just a couple of stabs all the way around. At this point we are going to take our garlic and our rosemary and stuff them to each of the holes. Rosemary first and then stuff them with the garlic. Just press it in there. This is going to give a lot of flavor in the inside of the meat. That is what slow roasting is all about and we would give it a quick boost. So dig your fingers in the hole and stuff it as far as you can in there. Later on the juices of the roast would sip in this. After that you want to take the garlic and stuff it in the holes right after the rosemary. This is why we say we didn't want them to be to small. You want to turn it to the side and do the exact same thing to the other side and there you go.
