O'kay so now the variation for the Eggs Benedict is Eggs Florentine. First we need a toasted English muffin. So once again butter to the pan and English muffin in the pan. Now what we'll need for the Florentine is of course, spinach and anything Florentine has spinach and tomato. We need two nice slices of tomato, about a half inch thick like so. You can reserve this part of the tomato for other recipes and so we have that and we also have our heavy whipping cream that we need. So the muffin is toasting nicely. Our breakfast potatoes are still nice and hot. What we are going to do is saute up the spinach and butter with some garlic. Once the spinach is semi-wilted we are going to add cream and we are going to reduce the cream by half. It will thicken up with the spinach. It is a very nice and very basic cream sauce but it is good for this dish, very good. Okay the muffins are ready so I will put the muffins directly on the plate and it is so easy that it comes right out of the pan. There we go, alright. Rinse your pan real quick.
