Hi! I'm Georgette Rampone with Expert Village. Today we're going to be making pumpkin spice cupcakes with vanilla bean cream cheese icing. Very, very delicious and popular cupcake in a southern California bakery. Some of the ingredients we'll be using today are flour. This is all-purpose flour. You can use any brand you like. I think they're all about the same, as long as it's an all-purpose flour and not a bread flour or a cake flour. We're using salted butter, white sugar and brown sugar, walnuts, golden raisins. You're welcome to use dark raisins or a mixture of the two. Often times, I'll put the dark and the golden together and it makes a really nice cupcake. I have a mixture of baking powder and baking soda, salt, real vanilla. This is bourbon vanilla. It's not made from bourbon, but it's from the Madagascar Bourbon Islands. Two eggs, vegetable oil, a combination of cinnamon, all spice, nutmeg and cloves, and canned pumpkin. Make sure that when you buy your pumpkin you don't make a mistake like so many people that I know, including myself, have done. Don't get the one that has the pumpkin spice spices already in it. You want just the plain pumpkin. My secret ingredient is club soda. This makes the cupcake very light, fluffy, and airy. It's a good trick when you're making any kind of cupcake or cake that calls for water as a liquid. If you substituted club soda, you'll have a lighter version of it. Let's begin.
