Adding Oil & Sugar for Making Braided Bread

Hi, my name is Brandon Sarkis, on behalf of Expert Village. Today, I'm going to show you how to make a braided wreath of bread. It's been about three or four minutes. Now what we're going to do is add the rest of our sugar, and we're going to let it go until we stop hearing that grinding sound. The grinding sound is the sugar granules in there. If you listen closely, you can hear the grinding sound go away, and also as you make this yourself, naturally, you'll hear that sound go away. The next thing we're going to add is our oil. We want to add our oil kind of slowly, in a thin stream. Obviously, it's not going to mix completely, because you're mixing oil and water for all practical purposes, and they're going to separate, but if you drop it all in there at once, it just kind of glops around, and sits on top. Just go ahead and dump all of that in there. I usually turn the speed up here just to get it to emulsify a little bit, but don't expect it to completely mix together. Let this go for a few minutes, and now we're going to add in our salt, just a little bit at a time. If you put all your salt in at once, you'll shock your yeast and kill it, so we're just adding the salt in just a tiny bit at a time. You'll hear that grinding sound start up again. That's the salt granules grinding between the whisk and the bottom of the bowl. Don't worry, there's nothing wrong. I'm going to let this mix for about a minute or so, and we're going to be right back to go on to the next step.
