RICHARD BUCCOLA: Hi, this is Rich Buccola here in New York City. And today on behalf of Expert Village, I'm going to show you how to make curry phyllo triangles. All right, so we're going to get our oil mixture to work with our phyllo dough, and it's real simple. We're just going to use our olive oil. We're going to brush it on our phyllo dough. I'm going to use some fresh thyme again and some of the curry powder. It's just a real simple mixture. I'm just going to add some of our thyme. Just grabbing and pulling back, you'll see the leaves come right off and just add them. A couple of sprigs should be fine. We're also going to add about half a cup of olive oil, and that's about half a cup, a little more. And then we're going to just go with our curry powder, and I just eyeball it. I just put enough in there. You probably want about a teaspoon, two teaspoon--about two teaspoons. And we're just going to give that a good mix. And that's going to be what we'd brush our phyllo dough with. All right, by using this oil mixture, it's going to help brown the crust of the phyllo dough. It's also going to make it a little bit easier to work with. I sometimes use butter. I put butter on it just to give it that nice brown crispiness. This--we're using this type of mixture though. We're actually going to let this sit a little bit just so it could marinate. What's great, it's going to flavor your phyllo dough too to give that curry taste and that's what we're looking for. This is an Indian type of appetizer, and it's a beautiful thing. And like I said, I'm working with curry and I love curry and I tend to do that. As you cook, you're going to find that you do things you love and you're going to find the spice or something you love and you're going to try to make things with it. And again, like I said, I'm going to play around with this recipe. And for today though, I know it tastes good like this because I'm making so many of them. Later on, I know I'm sort of like fluctuating between making 25 and 50, but I'm going to give you a set detail on exactly how to make 25. If you want to make 50, you just double it. Come back.
