Dicing Jalapeños for Jalapeño Cornbread
Hi, my name is Brandon Sarkis on behalf of Expert Village. Today I'm going to show you how to make buttermilk cornbread as well as jalapeno buttermilk cornbread. This part you're going to need a regular spoon, a jalapeno, and knife of some sort. I'm just going to grab my utility knife here, and I always pull the stem off. I think cutting it off is kind of a waste. So, we?re going to take the jalapeno, and I'm going to slice it right down the middle, just like that. And now we take our spoon and just go around the middle just like this to deseed the jalapeno. Pretty neat huh? Just right up the middle. The reason we're deseeding this is the seeds are what make jalapenos hot. I mean there's some heat, like ten percent of the heat is actually in the flesh, but the majority of it is in the seeds. So the other thing is the seeds aren't very tasty. They kind of get stuck in your teeth. I just use the tip of my knife to grag it out of there. Now we're just going to take this and we're going to flatten it out a bit, as such, and I'm just going to do a really small dice that we're going to mix in with our mixture. I'll take this, and I'll turn this sideways as such. I can't stress how important it is when doing this to one, use caution not to scratch your eye or pick your nose, or scratch somewhere else because it will hurt a whole lot. Also a very, very sharp knife always helps. So something else you can do if your knife isn't this sharp is slip the pepper over and do this side of the pepper. It's easier to slice through the soft inside of the pepper than it is the harsh outside of the pepper, especially if you have a knife that isn't the sharpest knife ever made, which this one may be pretty close to that actually. Alright, so there's our jalapeno. I've got to a piece here that I didn't dice up. I don't know how it made it through the process. Alright, so once again, there's the jalapeno and we're just going to take this, add this to our mixture and also add some more seasonings to it. So, let's do that next.
