Hi, my name is Sheryl McGlachlin with crazysheryl.com. Welcome to Expert Village.com. We are going to put the dry ingredients together in this cookie recipe. The very first thing I have done is I have added my whole wheat in my wheat grinder. I am now turning on my wheat grinder. You'll actually keep that on for a few minutes until the wheat is ground, and when its ground it will look like this. I'll pull it out of this little drawer, and this little filter that sits on here. I will open this up, and I'll take out the wheat that is in here. I can use it right in the recipe, or lots of times I'll just put it right there in the bag until I'm ready to use it. We are going to use five cups of whole wheat. That's why I like these big containers. I'll just put it right in here so we can make it not so messy. This; again, is freshly ground whole wheat. I just ground this today, and it tastes so good. It doesn't have to be exact, just roughly about five cups. I'm going to dump it right into here, and then I'm going to use one teaspoon of sea salt. I've made this recipe so much that I know what one teaspoon is, so I just cup my hand, and throw one teaspoon of sea salt in. Then, I'm going to add two teaspoons of baking soda, and I just mix that in. Now, I'm going to use one tablespoon of my dough enhancer, and again, the only time you would ever use dough enhancer is when you're using whole wheat. It's a soy product, and it helps the shelf life with the dough, it keeps it strengthened and keeps it together, and it makes the dough just a little more fluffy. It's a great ingredient, and I buy it in bulk. This lasts a long time.
