Cooking Chicken for Basil Chicken Curry

Hi. This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make Basil Chicken with Curry Coconut Sauce. Alright, we're going to add some olive oil to our pan. Don't worry if there's little bits of garlic or whatever, that's okay. Just going to add about another tablespoon and get that hot. We're going to start to add our chicken that's been marinating. Look at our chicken now, how beautiful it is. It's just got this whole Indian spice, beautiful smell of the cinnamon and everything comes out. It really mixes well. So we're going to get a nice hot flame on our oil and just start adding our pieces of chicken in here and frying them up. Okay. What we're looking to do is we're just looking to cook the chicken on both sides. I wasn't able to fit all the chicken. So that's alright. So you're looking to maybe cook about two minutes or until the pink is gone. And you're looking to flip and do about another minute or so on the other side. And then you're going to put this chicken on that paper towel on that plate that we, just to reserve any of the fat. Okay, you see it's been about two minutes. Chicken looks beautiful. I'm just going to take it out and put it on this paper towel just to reserve some of the oil. And then we're going to do the exact same thing with the rest of the chicken. So you do the same thing with your chicken and you'll see this is coming together pretty fast. Come back. We're going to start putting it all together. It's almost done and it smells amazing.
