Sauteing Ingredients for Basil Chicken Curry

Hi. This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make Basil Chicken with Curry Coconut Sauce. Okay, we're going to sauté our garlic, our jalapeños, our onions. We're going to put a nice flame, a nice hot flame and add about a tablespoon to a tablespoon and a half of olive oil. Just basically want to coat the bottom of your wok or your deep dish frying pan. We're going to get that really hot now. Okay, you know your olive oil is hot enough when you put a wooden spoon in and you get it to sizzle, so we're going to add all of our onion, our garlic, our jalapeños to that. So we're going to let it cook for about two minutes, sautéing it. We're also going to lower our flame just a little bit. Alright, you don't want the onions or the garlic to brown. You just want to open everything up to get it translucent, to get the flavors just to open. And it's about two minutes of sautéing and what you're doing is stirring constantly and we're going to just remove all of this and and add it to our bowl. Okay, so just put it right back into your bowl and set that aside. We're going to get ready to now to start frying up our chicken and getting that ready.
