How to Cut Jalapenos

Hi. This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make Basil Chicken with Curry Coconut Sauce. Alright, so we're back. We got two jalapeños. We're going to start by chopping them. But we're going to take off the stems and deseed them before we chop them up. Okay, with jalapeños, look for good ones. That they're firm, they're not bruised, good in color, dark in color. Going to take off the stems. There's a little piece here that was a little brown. So I cut that off as well. You do the same. Alright, we're going to cut the jalapeños length ways in half. You're going to see there's going to be all this seed stuff in here. And you don't want that. Just very carefully with your knife, we're going to just cut around it and we're going to pull that right out. Just like that. Alright, so we have our two halves and what I do is I slice the halves again in half, and slice this one in half. And we're going to chop this by grabbing all four. Just nice simple chops. Slowly moving the jalapeño pepper up and cutting through. To get the desired consistency, I'm just working my blade back and forth, pushing in, pushing in and just chopping away. Once you get it to your desired consistency, I like a fine chop with my jalapeño, add that to your garlic and your onion mix.
