How to Chop Onion & Garlic

Hi. This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make Basil Chicken with Curry Coconut Sauce. Alright. The first thing we're going to do is chop our red onion and our garlic. Alright. We're going to chop two small red onions. We're going to cut off each side, get off the skin by giving it a little cut and peeling off that back layer. You can even get that first layer sometimes. It's easier. Once you have the skin removed, you're going to just cut it in half and we're going to slice one way along the lines of the onion, and then we're going to actually just turn it sideways and cut that way. Don't worry if you don't have the right consistency with that first chop, because what you're going to do is just put the point of your knife and just working your blade back and forth, pushing your onion in to the middle and cleaning off your blade, you will chop down to the desired size. We're looking for a fine chop here. So continue to chop both onions. Another great thing about these silicone cutting boards, you just pick them up and we're going to put our onions right into our bowl. Alright. We're going to chop up some garlic. You'll need about five or six cloves of garlic. This just broke right off, so just break out your garlic. Sometimes you can hit it with your knife, like so, and it'll break it up. Take out five to six pieces of garlic. Alright. Just to remove our shell, we're going to just take the butt end of our knife, give it a little pounding like so and you'll see the shell comes right off. There's also the stem, remove the stem. And your garlic is ready for chopping. OK, you're just going to grab your garlic, very carefully slicing one way. Nice and small slices. Turn it the other way and again just chopping your garlic. And don't worry. Again if it's not the desired consistency. Alright, so again just using our chopping method of going back and forth with the back of the blade, getting it to the desired, the desired consistency that you're looking for. And then just finish chopping it up, and we're going to add that to our bowl as well.
