Once you've skinned the deer then you are ready to quarter the deer. There are four or five major parts of the deer which can be used for various deer meats. You have the front quarters. You can find the shoulder blade bone and cut off the quarters. Then you have the back strap which, if you move around here, runs along side of both backs from the top of the back quarters down on each side. Then you have the hind quarters which can be cut off and sawed off. Then a piece of the meat that not everyone actually knows about and is actually one of the better pieces of the meat is the tenderloin. It is this piece of meat down here which will be cut down here and can be peeled off as well. Some people, if you want, every part of the deer you can also do out the ribs for whatever reason; you plan on cooking or barbecuing those. Those are the basic parts of the deer for cooking sausage, steaks, stuff like that.
