How to Field Dress a Deer: Part 2

One thing to remember is if you shot a buck and you want to mount the deer you don't want to go further than this point so that a taxidermist can use that cape without using stitches to actually mount it later on. We will just take a gut knife here and split it very similar to a zipper, separating up to that bone. From there we'll try to break through. You can also do it with a knife, as well, continuing to open up the chest cavity. Continue to cut down through the throat so that you can get to the esophagus.
