How to Chop Peppers

Hi, this is Rich Buccola here in NYC. Today on behalf of Expert Village I'm going to show you how to make a nice veggie platter. I'm going to start off with our peppers today I'm just going to bring it over to our sink so we can give them a wash. I just want to give these peppers a good wash under the sink. I always try to go organic with my thin skin vegetables or fruits, I'm just going to give them a good rinse. These peppers are fresh, beautiful and nice colors we're just going to give them a good rinse and take it over back to our cutting board and then we're going to start to chop them. We got our nicely fresh beautifully wash peppers I usually take my little paper towel for our mess here. I'm going to have a plate just to put our peppers on it after I finish cutting them. I'm going to use our pairing knife for this one and what you want to do is just carefully and always cut careful you're just going to cut little incisions around the crown of the pepper and we're only going to take off that top. By doing so you can get inside and get all of this mess out that's the mess I'm talking about. So when you get all that mess out what I do then to make it easy is I just cut this in half. Then you'll see you want to get all these seeds and stuff so just take your knife and you really don't want this whiteness. You just want to have the pepper where it's green so I just cut it straight out like this. Be careful with this when using a sharp knife gets all your seeds out like so cleaning them out. That is pretty much nice and clean there's going to be a couple of seeds there and put that there for now. Take your chopping knife and with your fingers keeping it in I'm just going to slice it straight down. If it's flat don't worry cause you're going to cut it that way just try to cut in a quarter inches. Those are you slices nice and if you have a flat one just cut that like that and that's how we're going to put it together.
